Salisbury Steak with Garlic Mashed Potatoes and Corn


Ingredients:


For the Salisbury Steak:


1 lb ground beef


1/2 cup breadcrumbs


1/4 cup milk


1 small onion, finely chopped


1 egg


1 tbsp Worcestershire sauce


Salt and pepper to taste


2 tbsp olive oil


1 cup beef broth


1 tbsp cornstarch (optional, for thickening)


1 tbsp ketchup


1 tbsp Dijon mustard


For the Garlic Mashed Potatoes:


4 large potatoes, peeled and cubed


4 cloves garlic, minced


1/2 cup milk or cream


3 tbsp butter


Salt and pepper to taste


For the Corn:


4 ears of corn, husked (or 2 cups frozen corn)


2 tbsp butter


Salt and pepper to taste


Instructions:


Prepare the Salisbury Steak:


1. In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, egg, Worcestershire sauce, salt, and pepper. Mix well, and form into patties.


2. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until browned.


3. In a separate bowl, whisk together beef broth, ketchup, and Dijon mustard. Pour the mixture over the patties, then simmer for 10-15 minutes.


4. For a thicker gravy, stir in cornstarch and cook for a couple of minutes until it reaches the desired consistency.


Make the Garlic Mashed Potatoes:


1. Boil the cubed potatoes in salted water until they’re tender (about 15-20 minutes).


2. Drain the potatoes, then return them to the pot. Add minced garlic, butter, and milk, and mash until smooth and creamy. Season with salt and pepper to taste.


Prepare the Corn:


1. If using fresh corn, boil or steam until tender. Brush with butter and season with salt and pepper.


2. If using frozen corn, sauté in a pan with butter until heated through.


Notes:


For added flavor, sprinkle chopped herbs such as parsley or chives over the mashed potatoes before serving.


This meal makes a great comfort dish, with Salisbury steak, creamy mashed potatoes, and buttery corn making a well-rounded dinner.
