Ingredients:
2 cups sushi rice
2 1/2 cups water
1/4 cup rice vinegar
1 tablespoon sugar
1 teaspoon salt
2 chicken breasts, diced
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons mirin
1 tablespoon sesame oil
1 avocado, sliced
2 tablespoons sesame seeds (black and white)
Fresh cilantro, for garnish
Sriracha sauce, for drizzling
Instructions:
1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Cook the rice in a rice cooker with the water according to the manufacturer's instructions.
2. Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, gently fold the vinegar mixture into the rice. Let it cool slightly.
3. Marinate the Chicken: In a medium bowl, whisk together soy sauce, honey, mirin, and sesame oil. Coat the diced chicken in the marinade and let it sit for at least 15 minutes.
4. Cook the Chicken: Heat a non-stick skillet over medium heat. Cook the marinated chicken for 8-10 minutes, until it’s fully cooked and caramelized.
