Light Fluffy Almond Ricotta Cake
Ingredients:
1 cup ricotta cheese
1/2 cup almond flour
3/4 cup sugar
3 large eggs
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup all-purpose flour
Powdered sugar for dusting
Instructions:
1. Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan.
2. In a large bowl, whisk ricotta cheese, almond flour, sugar, eggs, vanilla extract, and almond extract until smooth.
3. In a separate bowl, sift together all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
4. Pour the batter into the prepared pan and smooth the top.
5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
6. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
7. Dust the cooled cake with powdered sugar before serving.
