Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 cup unsweetened applesauce
1/2 cup vegetable oil
2 large eggs, beaten
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
In a large mixing bowl, whisk together flour, sugar, baking soda, salt, cinnamon, cloves, and nutmeg.
Add the applesauce, vegetable oil, and beaten eggs to the dry ingredients. Mix until just combined. Be careful not to overmix.
Fold in raisins and walnuts, if using.
Pour the batter into the prepared baking pan. Smooth the top with a spatula.
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Once cooled, dust with powdered sugar or serve with a dollop of whipped cream, if desired.
