 Mango Tango Cheesecake Cake 


Ingredients:


Cake: Eggs, sugar, vanilla, cake flour, salt, baking powder, dried mango, and optional food coloring.


Cheesecake Filling: Cream cheese, powdered sugar, vanilla, and heavy cream.


Mango Topping: Fresh or canned mango, sugar, lemon juice, water, and cornstarch.



Instructions:


1. Prepare the Cake: Preheat oven, mix egg yolks with sugar, add flour mixture and chopped dried mango. Beat egg whites and fold into the batter, then bake.



2. Roll the Cake: Invert warm cake onto a powdered-sugar-dusted towel, roll it up, and cool.



3. Cheesecake Filling: Beat cream cheese, powdered sugar, vanilla, and fold in whipped cream.



4. Assemble: Spread filling on the cooled cake, re-roll, and refrigerate.



5. Mango Topping: Cook mango with sugar, lemon, water, and cornstarch until thickened, then cool.



6. Decorate and Serve: Top with mango mixture, garnish, and enjoy!
