Spanakopita Triangles
Ingredients:
- 1 egg
- 125 ml (1/2 cup) milk
- 125 ml (3/5 cup) vegetable oil
- 2 tbsp water
- 1 tsp salt
- Feta cheese
- Spinach
- Salt and pepper to taste
- 3 rolls phyllo dough
- Poppy seeds, for garnishing
- 1 egg yolk (for brushing)
Instructions:
- In a bowl, mix the egg, milk, oil, water, and salt together.
- Lay a sheet of phyllo pastry on a clean surface. Spread a little of the egg mixture over the entire sheet.
- Repeat this twice, layering a total of 3 sheets.
- Mix the feta cheese with the cooked spinach and season with salt and pepper.
- Spread the spinach and feta mixture over the phyllo pastry.
- Roll the pastry from one end to the other to create a long strip. Seal the edges with the egg wash to prevent the filling from leaking during baking.
- Cut the strip into triangles and place them on a baking tray.
- Brush each triangle with egg yolk and sprinkle with poppy seeds.
- Bake at 180ºC (356°F) for about 15 minutes until golden and crispy.
- Remove from the oven, serve, and enjoy!
