Spanakopita Triangles 


Ingredients:

  • 1 egg
  • 125 ml (1/2 cup) milk
  • 125 ml (3/5 cup) vegetable oil
  • 2 tbsp water
  • 1 tsp salt
  • Feta cheese
  • Spinach
  • Salt and pepper to taste
  • 3 rolls phyllo dough
  • Poppy seeds, for garnishing
  • 1 egg yolk (for brushing)

Instructions:

  1. In a bowl, mix the egg, milk, oil, water, and salt together.
  2. Lay a sheet of phyllo pastry on a clean surface. Spread a little of the egg mixture over the entire sheet.
  3. Repeat this twice, layering a total of 3 sheets.
  4. Mix the feta cheese with the cooked spinach and season with salt and pepper.
  5. Spread the spinach and feta mixture over the phyllo pastry.
  6. Roll the pastry from one end to the other to create a long strip. Seal the edges with the egg wash to prevent the filling from leaking during baking.
  7. Cut the strip into triangles and place them on a baking tray.
  8. Brush each triangle with egg yolk and sprinkle with poppy seeds.
  9. Bake at 180ºC (356°F) for about 15 minutes until golden and crispy.
  10. Remove from the oven, serve, and enjoy!
