Salmon Alfredo Pasta
Ingredients:
- 2 salmon fillets (skinless and boneless)
- 8 oz fettuccine pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Fresh parsley for garnish (optional)
- Lemon wedges (optional)
Instructions:

Cook the pasta: In a large pot, bring salted water to a boil. Cook the fettuccine according to package instructions, drain, and set aside.

Cook the salmon: Heat olive oil in a pan over medium heat. Season the salmon fillets with salt and pepper. Cook the salmon for about 3-4 minutes per side, until cooked through and flaky. Remove from the pan, break it into chunks, and set aside.

Make the Alfredo sauce: In the same pan, add minced garlic and sauté for about 30 seconds. Pour in the heavy cream, bringing it to a simmer. Stir in the Parmesan cheese, salt, pepper, and garlic powder. Cook for 2-3 minutes, until the sauce thickens.

Combine pasta and salmon: Add the cooked pasta to the Alfredo sauce and toss to coat evenly. Gently fold in the salmon chunks.

Serve: Garnish with fresh parsley and a squeeze of lemon, if desired.
