 Salmon Alfredo Pasta


      Ingredients:

  • 2 salmon fillets (skinless and boneless)
  • 8 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Fresh parsley for garnish (optional)
  • Lemon wedges (optional)

   Instructions:

  1. Cook the pasta: In a large pot, bring salted water to a boil. Cook the fettuccine according to package instructions, drain, and set aside.

  2. Cook the salmon: Heat olive oil in a pan over medium heat. Season the salmon fillets with salt and pepper. Cook the salmon for about 3-4 minutes per side, until cooked through and flaky. Remove from the pan, break it into chunks, and set aside.

  3. Make the Alfredo sauce: In the same pan, add minced garlic and sauté for about 30 seconds. Pour in the heavy cream, bringing it to a simmer. Stir in the Parmesan cheese, salt, pepper, and garlic powder. Cook for 2-3 minutes, until the sauce thickens.

  4. Combine pasta and salmon: Add the cooked pasta to the Alfredo sauce and toss to coat evenly. Gently fold in the salmon chunks.

  5. Serve: Garnish with fresh parsley and a squeeze of lemon, if desired.
