Ingredients:
1. 4 large baking potatoes
2. 1 pound ground beef
3. 1 onion, diced
4. 2 cloves garlic, minced
5. 1 cup shredded cheddar cheese
6. 1/2 cup shredded Monterey Jack cheese
7. 1/4 cup chopped fresh cilantro
8. 1 teaspoon paprika
9. Salt and pepper, to taste
10. 2 tablespoons olive oil
11. Optional toppings: sour cream, salsa, diced tomatoes, bacon bits
Instructions:
1. Preheat oven: 400°F (200°C).
2. Bake potatoes: Rub potatoes with olive oil and poke with fork. Bake for 45-60 minutes or until tender.
3. Prepare filling: Cook ground beef in a skillet until browned. Drain excess fat.
4. Add onion and garlic: Cook until onion is translucent.
5. Mix cheese and spices: Combine cheddar, Monterey Jack, paprika, salt and pepper.
6. Assemble: Slice baked potatoes in half lengthwise. Scoop out some flesh to make room for filling.
7. Fill potatoes: Divide beef mixture and cheese mixture among potatoes.
8. Top with cheese and cilantro: Sprinkle remaining cheese and cilantro.
