 Luscious Creamy Coconut Curry Shrimp Soup

Ingredients:

- 1 pound large shrimp, peeled and deveined

- 1 can (14 oz) coconut milk

- 2 tablespoons red curry paste

- 1 onion, finely chopped

- 2 garlic cloves, minced

- 1 red bell pepper, sliced

- 1 cup vegetable broth

- 1 tablespoon fish sauce

- 1 tablespoon lime juice

- 2 teaspoons grated ginger

- Fresh cilantro and lime wedges for garnish

- Salt and pepper to taste

Directions:

1. Heat a splash of oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant, about 2 minutes.

2. Stir in curry paste and cook for 1 minute to release aromas.

3. Add bell pepper and cook for another 2 minutes.

4. Pour in coconut milk, broth, and fish sauce. Bring to a simmer.

5. Add shrimp and simmer until just cooked through, about 3-4 minutes.

6. Stir in lime juice and season with salt and pepper.

7. Garnish with cilantro and serve with lime wedges.
