Ingredients


1/2 cup (115g) unsalted butter, melted and slightly cooled


3/4 cup (150g) granulated sugar


2 large eggs


1 teaspoon vanilla extract


3/4 cup (90g) all-purpose flour


1 teaspoon baking powder


1/4 teaspoon salt


3-4 medium apples, peeled, cored, and diced (use a mix of sweet and tart apples)


Optional: Powdered sugar for dusting


Instructions: 


1. Preheat Oven

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or springform pan.


2. Mix Wet Ingredients

In a large mixing bowl, whisk together the melted butter, sugar, eggs, and vanilla extract until smooth.


3. Combine Dry Ingredients

In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold this mixture into the wet ingredients until just combined.


4. Add Apples

Gently fold the diced apples into the batter, ensuring they're evenly distributed.


5. Bake

Pour the batter into the prepared pan and smooth the top. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.


6. Cool and Serve

Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
